Power balls

These quick and easy little treats are jam packed full of goodness and taste great! 

A few years back, I was stuck for ideas on what to eat as a healthy snack on the go. Not wanting to buy lots of high calorie, sugary bars with non recyclable packaging I decided to look in to making my own energy bites. And thus what I like to call 'Power balls' were born. 

What I love about these is that they are so adaptable. I like to use walnuts, but if you don't have any you can use sub other nuts or a bag of raw mixed nuts will even suffice! If I don't have dates, then just sub raisins or sultanas, or again mixes dried fruit works well. You can throw in some sunflower or pumpkin seeds or leave them out. And any liquid sweetener will do :) 

Equipment needed: Blender, measuring cups, pot for melting the cacao butter & your own hands! 

Ingredients:

1/2 Cup of Cacao butter, melted - This can be bought in most health food stores or online. A good sized bag lasts for up to 8 batches

1 Cup of Dates or alternative 

1 Cup of rolled oats 

1/2 Cup of sunflower or pumpkin seeds if desired 

1 cup of desiccated coconut 

1 cup of walnuts or other type of nut if preferred

Little squirt of liquid sweetener, I usually choose agave syrup (available in most supermarkets and health food stores) 

Method:

Melt the cacao butter in a pot over a medium heat, this should only take a few minutes

Pour the cacao butter with all other ingredients into the blender and whizz until well blended

Roll into balls, large or small depending on how many you want. They should feel a little squidgy and roll together easily

You can leave as is or roll in some cocoa powder, turmeric or cinnamon 

Cover and leave to set for 8 hours- best is to make in the evening and set over night 

And voila! Eat and enjoy :)
